Caye Caulker water taxis, Belize dollars, fry jacks, and eSIM data from Philip Goldson before the boat to the cayes.
Belize City is the airport-and-water-taxi hinge, not the holiday. Philip S. W. Goldson (BZE) sits in Ladyville; you still need a taxi to the water-taxi terminals on the city's edge for San Pedro Belize Express or Ocean Ferry to Caye Caulker and Ambergris Caye. The reef, the split on Caulker, and Hol Chan are the reason people came — plus ATM Cave and Maya sites inland if you have the stomach for a river day.
English is official; Kriol, Spanish, and Garifuna show up depending on the town. The Belize dollar (BZD) is pegged two-to-one with the US dollar; USD is taken, but water-taxi change and fry-jack stands still like BZD. Eat fry jacks at breakfast, rice and beans with stew chicken, hudut if you reach a Garifuna kitchen, and Marie Sharp's on everything.
Chicken buses run the mainland; Tropic Air and Maya Island Air hop the cayes when the boat looks ugly. Digi covers Belize City and San Pedro more thickly than a jungle cave mouth. An eSIM live at Goldson means the terminal pin and the Caulker dock WhatsApp are not a guess after you realise the international airport is not next to the boat.

BZE is in Ladyville. The boats to Caulker and San Pedro leave from Belize City terminals. Budget a taxi between them. Treating the airport like a ferry port is the mistake that misses the last Ocean Ferry.
The island is a split, a reef, and a no-shoes pace. Ambergris (San Pedro) is larger and still not a mainland highway. Renting a car 'for Belize' is a Cayo and Hummingbird Highway plan.
Puffed fried dough with refried beans is breakfast. The hot sauce is local, not a generic Caribbean bottle. If the cafe only serves a US breakfast platter, walk toward the place whose chalkboard is in Kriol and English.
You swim, climb, and keep your phone in a dry bag. It is inland from San Ignacio, not a caye add-on. Combining it with a same-day Hol Chan snorkel is how people do neither well.
Mainland buses are former US school buses with a conductor and a destination on the windshield. They are not a ZR van and not a Mexican ADO. Pay in BZD and say the village out loud.

The approach is a wet trail with stream crossings, then a swim into the cave and a scramble over river rock. Soft-soled water shoes or closed-toe Keens survive that; leather hiking boots do not dry in the humidity. Skip sunscreen and spray before you go in — operators turn you around at the water.

Xunantunich, Cahal Pech, and the cave day sit naturally on a Cayo stay. Doing ATM as a raid from Ambergris or Caulker burns the daylight in a van. Split the week: inland nights, then one caye, not both from the same hotel.

Not at the airport. Take a taxi from BZE (Ladyville) to the Belize City water-taxi terminals used by San Pedro Belize Express or Ocean Ferry. Data on arrival is how you send the pin and check the last boat, instead of assuming the terminal is in the car park.
Do not build the day around an airport kiosk. An eSIM installed at home is online for the terminal taxi. Unlocked iPhone XS / Pixel 3 / Galaxy S20 and newer skip that desk. Add Digi in town only if you need a Belizean number.
You may lose the tower on the crossing. Have the booking offline and pick up service again on the island. That is normal, not a broken plan.
USD is widely taken at 2:1. Water taxis, chicken buses, and fry-jack stands still like BZD change. Data finds an ATM in Belize City; it does not replace the notes on the dock.
Not on a single-country Belize plan. Chetumal and Tikal are different networks. Use a plan that lists each country if you continue to Bacalar or Flores.

Philip Goldson puts you in Ladyville, not on the boat. Install an eSIM before you fly so the taxi to the San Pedro Belize Express or Ocean Ferry terminal is a pin, not a rumour in the arrivals hall.
Digi shops in Belize City or San Pedro can add a local number later. For a week of Caulker docks and a Cayo cave day, prepaid data already on the phone — plus offline maps on the reef — is the piece you want before you leave home.
